Tacos, Pico & Guac

This is a fantastic meal: easy to make, delicious and is just as a good as a quick weeknight meal or serving a party of twenty. In this particular case we made it just for the three of us to watch the Super Bowl. Taco meat is currently on the short list of things other than fruit or sweets that our 3 year old daughter will eat, so we have her help us as much as possible.

Get Ready: dice 1/2 of an onion and 1 banana pepper and get all of the seasoning combined: The seasoning is for one pound of meat.

  • 1 Tablespoon chili powder
  • 1/4 teaspoon each: garlic powder, onion powder, oregano and crushed red pepper
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons cumin
  • salt & pepper to taste

Get Cooking: saute the onion and pepper with a little of the seasoning until softened but not browned, add the meat and cook thoroughly adding the remainder of the seasoning as it cooks.

Make Your Pico & Guac: combine all ingredients listed for each. The pico can be made well ahead of time, and I will dice the tomatoes first and salt them in a strainer to pull out any excess moisture while I dice up the other ingredients. I will also make the guac ahead and combine everything EXCEPT the avocado. I will smash the avocado and combine right before serving to avoid browning.

Pico

  • 6 roma tomatoes diced
  • 1/2 onion (white or red) diced
  • 1 jalapeno or serrano pepper diced, more or less based on your love for heat
  • 1/2 cup cilantro diced
  • 1 lime juiced
  • 1 clove garlic minced
  • salt & pepper to taste
  • pinch of cumin

Guac

  • 3 avacados smashed
  • 2 roma tomatoes diced
  • 1 lime juiced
  • 1/2 teaspoon each: salt, cumin & cayenne
  • 1/2 onion (white or red) diced
  • 1/2 jalapeno or serrano diced
  • 1 Tablespoon cilantro chopped
  • 2 cloves garlic minced

Time to assemble & enjoy!!!
