The Glutton Scramble

If you’re looking for a nice healthy egg white & spinach scramble just turn back now. This is not a pretty dish but it’ll stick to your ribs. It’s rich, it’s greasy & a little spicy. It’s the perfect weekend breakfast when you have indulged a little too much the night before. This is also a great dish, thrown together in one skillet that you can share when you have a group over for breakfast or brunch. A big shout out to my sister-in-law Michelle who first turned us onto this killer concoction.

This dish has it all: eggs, meat, potatoes, cheese & hot sauce. That’s your ingredient list, personalize it any which way you’d like. You can use bacon, sausage, ham, tater tots, roasted potatoes. Anything your heart desires.

We start off by cooking our bacon. It doesn’t need to look pretty since we are chopping it up later.

Next we add our tater tots right into the bacon grease. As they brown I like to smash them and break them up a bit.

Next we will add our eggs and chopped bacon back in and add some shredded cheddar to melt in while the eggs finish cooking.

Throw a few scoops in a bowl or on a plate and finish with your favorite hot sauce.

  1. Nice! Used to get something very similar to this every time we were in Milwaukee. Came out in the cast iron skillet that it was cooked in, and of course being in Wisconsin I think it had at least 3 different types of cheeses, if not more! Delicious.

    And you’re right, it’s not necessarily the “helathiest” but swapping out the hash browns for some multi colored potatoes and using some high quality potatoes could make this dish a pretty decent option. As long as one person doesn’t eat the entire meal themselves!!
